Chicken hearts in sour cream: a quick weekend recipe

Chicken hearts are a fantastic food. Unlike other offal, they require no prior preparation and cook very quickly. They have a pleasant taste and great texture, and the best way to highlight their qualities is to cook them with sour cream and onions, then serve with your favorite side dish.

  • Instead of chicken hearts, you can use another flavorful ingredient that pairs well with creamy notes, like mushrooms.
  • Try making the dish not only in the basic version but also with different spices. Nutmeg or oregano would fit perfectly.
  • Use low-fat sour cream that has a sauce-like consistency. Feel free to add more than the recipe suggests if you want extra creaminess.
  • These stewed hearts easily turn into a pasta sauce. Cook the spaghetti for a couple of minutes less than the package instructions, then transfer them to the sauce. Reserve some pasta cooking water and add it to the hearts. Finish cooking the pasta in the sauce.
  • Buckwheat, bulgur, and other grains also work well as companions for the dish.

Ingredients for 2 servings:

  • 250 grams of chicken hearts
  • 2 medium shallots
  • 3-4 tablespoons of sour cream
  •  5-10 grams of butter
  •  A pinch of salt
  • Ground pepper to taste

Instructions:

  1. Finely chop the onions. Place a pan over low heat, melt the butter, and add the onions. Sauté slowly, ensuring they don’t burn. The onions should become slightly translucent by the time you add the hearts
  2.  Cut the chicken hearts into quarters. You can cut them lengthwise or crosswise, whichever you prefer.
  3. Once the onions are ready, add the hearts to the pan. Sauté the hearts over medium heat for 5-7 minutes, stirring occasionally.
  4. Add the sour cream, salt, and pepper, and mix well. Keep cooking over low heat for another 5-7 minutes. The hearts are ready when they are tender and seasoned to taste.
  5. Combine the hearts with your chosen side dish and serve hot.
  6. Enjoy your meal!
